Feb. 21st, 2011 01:10 pmGood God damn I just made the most amazing lime and elderflower cupcakes.
Huuuunnnnngh...
Took the lemon and elderflower recipe from this book and switched out the lemon zest for lime zest and the lemon extract for the juice of a lime, and mixed the frosting with lime juice instead of water.
Citrus party IN MY MOUTH.

Came out super fluffy inside too, when I bit right into the middle of that sucker.

It is a good book. We approve of the book. Though so far I've only tried a couple of recipes, I know
gourami_milk has tried a few of the others, and so far they've all come out really well. The toffee pecan ones in particular have earned the nickname of DeathCake for very good and valid reasons.
What surprised me was that, after taking into consideration the temperature vagueries of my oven, the cooking times have actually been surprisingly accurate on the stuff I've tried. (My oven tends to burn too hot, so a direction of 180C means I need 155C or I end up with cremated edges and raw middles but that's an oven fault not an issue with the instructions.)
I'm so used to having to fiddle cooking times that aren't quiiiiiite right it's kind of gratifying to discover for once that when it says it'll take 20 minutes... it actually takes 20 minutes. Rather than 15 or 25.
Anyway. I said I was going to make cake today, so I have made cake. And I saw that it was good.
(And then I eated it, with obligatory LOLcat comentary.)
